Peanut Butter Chocolate Chip Zucchini Bread

A deliciously moist and rich zucchini bread with a twist of peanut butter and chocolate chips that brings comfort and nostalgia.

  • 1 cup grated zucchini
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grab that fresh zucchini, wash it, and grate it.
  3. In a large mixing bowl, combine the grated zucchini, peanut butter, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract.
  4. Whisk together the all-purpose flour, baking soda, baking powder, and salt in a separate bowl.
  5. Gradually add the dry mixture to the wet mixture, stirring just until combined.
  6. Gently fold in the chocolate chips.
  7. Grease a 9×5-inch loaf pan and pour the batter evenly into the pan.
  8. Pop that loaf into the oven and bake for 50–60 minutes, or until a toothpick comes out clean.
  9. Once baked, let it cool in the pan for about 10 minutes, and then transfer it to a wire rack to cool completely.

Notes
