Ultimate Peach Loaf

A delightful Peach Loaf that brings warmth and joy, reminiscent of summer memories, and is perfect for any occasion.

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup peaches, diced (fresh or canned)
  • 1/2 cup orange juice
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon orange zest (for glaze)
  • 1 tablespoon orange juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep a 9×5 loaf pan by greasing it with butter or non-stick spray.
  3. Mix the dry ingredients: whisk together flour, baking powder, baking soda, and salt.
  4. Cream together the softened butter and sugar until light and fluffy, about 3 minutes.
  5. Add the eggs and vanilla extract, beating each egg in one at a time.
  6. Alternate adding the dry ingredients and orange juice to the wet mixture, starting and ending with the dry ingredients.
  7. Fold in the diced peaches gently.
  8. Pour the batter into the prepared loaf pan and spread it evenly.
  9. Bake for about 55-65 minutes, or until a toothpick inserted comes out clean.
  10. Cool the loaf in the pan for 10 minutes before transferring to a wire rack.
  11. Make the glaze by mixing powdered sugar, orange zest, and orange juice until smooth; drizzle over the cooled loaf.

Notes

For a vegan option, use flax eggs instead of regular eggs. Feel free to experiment with different fruits or nuts for variations.
