Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup ripe peaches, peeled and diced
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

Instructions

  2. Prepare your baking pan by greasing a 9×5-inch loaf pan with butter or non-stick spray.
  3. Mix the dry ingredients in a medium bowl: whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  4. Cream the butter and sugar in a large bowl until light and fluffy—about 3 minutes.
  5. Add the eggs one at a time, fully incorporating each, followed by the vanilla extract.
  6. Combine the wet and dry ingredients, alternating between the flour mixture and milk until just combined.
  7. Fold in the diced peaches gently.
  8. Pour the batter into the prepared pan, smoothing the top.
  9. Bake for 60-70 minutes until the top is golden brown and a toothpick comes out clean.
  10. Cool in the pan for about 10 minutes, then transfer to a wire rack.
