Delightful Pasta Salad Cups

A simple, hearty pasta salad served in individual cups, perfect for gatherings and packed with fresh vegetables and creamy Italian dressing.

Ingredients

  • 8 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • 1/2 cup black olives
  • 1/4 cup chopped fresh parsley
  • 1/2 cup Italian dressing
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a rolling boil.
  2. Add the rotini pasta and cook according to the package directions until it’s al dente.
  3. Once the pasta is done, drain it in a colander and rinse it under cool running water.
  4. While the pasta cools, chop your cherry tomatoes, cucumbers, and parsley.
  5. In a large mixing bowl, combine the drained pasta, cherry tomatoes, cucumbers, black olives, and parsley.
  6. Pour the Italian dressing over the pasta and give it a gentle toss.
  7. Add salt and pepper to taste.
  8. Scoop generous portions of the salad mixture into small cups or bowls.
  9. Top each cup with reserved parsley and optionally a slice of cucumber on the rim.
  10. Chill in the refrigerator for at least 30 minutes before serving.

Notes

This salad tastes even better the next day as the flavors meld together.
