Slow Cooker Chicken & Wild Rice

Ingredients

  • Chicken Breasts or Thighs
  • Wild Rice
  • Vegetables (Carrots, Celery, Onions)
  • Chicken Broth
  • Herbs (Thyme, Parsley)
  • Seasonings (Salt, Pepper)
  • Garlic (optional)
  • Mushrooms (optional)

Instructions

  1. Prep your ingredients: chop the carrots, celery, and onions into bite-sized pieces. If adding garlic and mushrooms, slice those up too.
  2. Sear the chicken (optional): give your chicken a quick sear in a skillet over medium-high heat until golden brown (about 3-4 minutes per side).
  3. Layer the ingredients in the slow cooker: place the chicken at the bottom, add wild rice, sprinkle in chopped veggies, pour chicken broth until just covered, and season with salt, pepper, thyme, and parsley.
  4. Let it cook: cover and set to low for about 6-8 hours or high for 3-4 hours.
  5. Shred the chicken: once cooked, pull out and shred the chicken with two forks, return to the pot, and mix.

Notes

For extra creaminess, stir in cream or coconut milk towards the end of cooking. Experiment with different herbs and spices to match your taste.
