Slow Cooker Cajun Chicken Pasta

A comforting and flavorful slow cooker dish with Cajun spices, chicken, and pasta that’s perfect for any gathering.

Ingredients

  • Chicken breast or thighs
  • Bell peppers
  • Onion
  • Garlic
  • Cajun seasoning
  • Chicken broth
  • Pasta (penne or fettuccine)
  • Olive oil
  • Salt
  • Pepper
  • Parmesan cheese (optional)

Instructions

  1. Prep your chicken: Cut chicken breasts into chunks or leave thighs whole. Season with salt and pepper.
  2. Sauté the veggies: Heat olive oil in a skillet, add bell peppers and onions, sauté for 3-4 minutes, then add garlic and sauté for 1 more minute.
  3. Layer the slow cooker: Add sautéed veggies, then top with chicken and sprinkle Cajun seasoning. Pour in chicken broth.
  4. Cook low and slow: Set slow cooker on low for 5-6 hours or high for 3-4 hours.
  5. Cook the pasta: 30 minutes before serving, cook pasta according to package instructions.
  6. Shred the chicken: Once cooked, shred chicken with two forks and return to the slow cooker.
  7. Combine and serve: Toss cooked pasta with the mixture, adding cream or cream cheese for creaminess if desired.
  8. Garnish and enjoy: Serve topped with Parmesan cheese and parsley.
