Rustic Zucchini Sauté

A delightful zucchini sauté that captures the essence of rustic cooking with garlic, onions, tomatoes, and Parmesan cheese.

  • 2 Zucchini, sliced into half-moons
  • 1 teaspoon Salt
  • 2 tablespoons Olive Oil
  • 3 cloves Garlic, minced
  • 1 Onion, chopped
  • 1 cup Tomatoes, diced (fresh or canned)
  • ½ cup Parmesan Cheese, grated

Instructions

  1. Prep your ingredients: Rinse the zucchini under cool water. Cut off the ends and slice them into half-moons or cubes, aiming for about ½ inch thick pieces.
  2. Mince the garlic and chop the onion into small pieces.
  3. In a large skillet, heat the olive oil over medium heat. Toss in the onions and sauté until translucent, about 4-5 minutes.
  4. Add the minced garlic and stir for about 30 seconds until fragrant.
  5. Incorporate the zucchini into the skillet, sprinkle with salt, and stir well. Cook for about 5-7 minutes, stirring occasionally.
  6. Toss in the diced tomatoes and cook for an additional 3-4 minutes until tomatoes soften.
  7. Before serving, grate Parmesan cheese over the top and stir to melt slightly.

Notes

For a spicy kick, add red pepper flakes while sautéing. Experiment with fresh herbs for an aromatic touch.
