Butternut Squash Stuffed with Bacon and Goat Cheese

A delightful butternut squash dish stuffed with crispy bacon and creamy goat cheese, perfect for a comforting meal.

  • 1 Large Butternut Squash
  • 6 Ounces (170g) Bacon
  • 4 Ounces (110g) Goat Cheese
  • 1 Small Yellow Onion
  • 2 Cloves Garlic
  • 1/2 Teaspoon Ground Sage
  • Salt and Pepper to taste
  • Olive Oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the squash in half lengthwise and scoop out the seeds.
  3. Drizzle the cut sides with olive oil, then sprinkle with salt and pepper.
  4. Place the squash cut-side down on a baking sheet and roast for about 30-35 minutes.
  5. Heat a skillet over medium heat and cook the bacon until crispy.
  6. Add the diced onion to the skillet and cook until softened, then stir in the garlic and sage.
  7. Chop the bacon and mix it with the goat cheese in the skillet.
  8. Flip the roasted squash halves over and stuff with the bacon and cheese mixture.
  9. Return to the oven and roast for an additional 10-15 minutes.
  10. Remove from the oven, let cool for a few minutes, and enjoy!

Notes

For a vegetarian option, replace bacon with sautéed mushrooms and spinach. You can mix in dried cranberries for a sweet twist.
