Roasted Kohlrabi

A cozy and delightful recipe for roasted kohlrabi, bringing warmth and bursting with flavor.

Ingredients

  • 4 whole Kohlrabi (about ¾ pound each)
  • Olive oil for the pan
  • Salt and freshly ground black pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the kohlrabi under cold water to remove any dirt.
  3. Trim off the top and tail, then peel them using a vegetable peeler. Cut them into bite-sized cubes (about 1-inch pieces).
  4. Toss the kohlrabi cubes with olive oil, salt, and pepper in a large mixing bowl.
  5. Spread the seasoned kohlrabi onto a baking sheet in a single layer.
  6. Roast for about 25 to 30 minutes, flipping halfway.
  7. Sprinkle with fresh herbs before serving.

Notes

For additional flavor, try adding lemon zest or balsamic vinegar. Also, consider roasting on a wire rack for extra crunch.
