Sheet Pan Mediterranean Chicken & Zucchini

A delightful dish featuring seasoned chicken and vibrant veggies roasted to perfection, perfect for family dinners.

  • 4 boneless, skinless chicken breasts
  • 2 medium zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • 1 red onion, cut into wedges
  • 3 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the chicken by seasoning with salt, pepper, oregano, garlic powder, and smoked paprika, then coat with olive oil and lemon juice.
  3. Chop the zucchinis, tomatoes, and onion, keeping pieces uniform in size.
  4. Mix the veggies in a bowl with olive oil and seasonings.
  5. Arrange the chicken on a baking sheet and surround it with veggies.
  6. Bake for 25-30 minutes until chicken is cooked through and veggies are caramelized.
  7. Garnish with remaining lemon juice and fresh parsley before serving.

Notes

Feel free to swap ingredients based on your preferences or available veggies, and use bone-in thighs for more flavor.
