Hamburger Potato Casserole

A hearty, comforting casserole featuring layers of ground beef, sliced potatoes, and gooey cheese, perfect for family dinners and potlucks.

  • 1 lb ground beef
  • 4 medium russet potatoes, sliced
  • 2 cups cheddar cheese, shredded
  • 1 can cream of mushroom soup
  • 1 cup milk
  • 1 onion, diced
  • Salt and pepper to taste
  • Optional: herbs like thyme or parsley for seasoning

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the ground beef in a large skillet over medium heat, seasoning with salt and pepper, and cook for about 5-7 minutes.
  3. Prepare the creamy mixture by whisking together the cream of mushroom soup and milk in a bowl.
  4. Layer half of the sliced potatoes in a greased 9×13-inch baking dish, followed by half of the cooked beef mixture, then drizzle with creamy soup mixture and sprinkle with cheddar cheese. Repeat the layers.
  5. Bake covered with aluminum foil for about 45 minutes.
  6. Uncover and bake for another 15 minutes until the cheese is bubbly and golden brown.
  7. Let it rest for about 10 minutes before serving.
  8. Serve and enjoy!

Notes

Feel free to add vegetables or switch out the ground beef for a meatless option. This casserole reheats beautifully.
