Hearty Ground Beef Zucchini Boats

Delicious zucchini boats stuffed with seasoned ground beef and topped with melted cheese, a comforting dish that brings back cherished memories.

  • 4 medium zucchini
  • 1 pound ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • 1 cup shredded cheese (mozzarella or cheddar)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchini in half lengthwise and scoop out the seeds with a spoon to create a ‘boat.’
  3. Drizzle them with a bit of olive oil and sprinkle with salt.
  4. Add a splash of olive oil to a large skillet over medium heat and toss in your chopped onions. Sauté for about 4 minutes until they become translucent.
  5. Stir in the minced garlic and cook for an additional minute until fragrant.
  6. Add the ground beef to the skillet, breaking it up as it cooks. After about 5 minutes, once the beef is browned and no longer pink, drain off any excess fat.
  7. Stir in the Italian seasoning, salt, and pepper, mixing well. Then pour in the marinara sauce and mix until everything is evenly coated and heated through—about 2-3 minutes.
  8. Spoon the hearty beef mixture into each zucchini ‘boat,’ packing it tightly. Top generously with shredded cheese.
  9. Place the zucchini boats on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the zucchini is tender and the cheese is bubbly and golden.
  10. Once out of the oven, let the boats cool for about 5 minutes. Garnish with fresh basil or parsley if you’d like.
