Creamy Pumpkin Pasta

A warm and comforting creamy pumpkin pasta that’s perfect for autumn nights.

Ingredients

  • 8 oz pasta of choice
  • 1 cup pumpkin puree
  • 1 cup chicken broth (or vegetable broth for vegetarian version)
  • 1/2 cup heavy cream (or half-and-half/coconut milk)
  • 1/2 tsp nutmeg
  • Salt and pepper to taste
  • Parmesan cheese for serving
  • Fresh herbs (optional) for garnish

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add your pasta and cook according to the package directions until al dente. Reserve about 1/2 cup of the pasta water, then drain the rest.
  2. Flavor the Sauce Base: In a large skillet over medium heat, pour in the chicken broth. Once it’s heated, add the pumpkin puree, stirring until creamy and incorporated.
  3. Add the Cream & Spice: Pour in the heavy cream, sprinkle in the nutmeg, salt, and pepper. Stir and simmer for about 5 minutes.
  4. Combine Pasta and Sauce: Add the drained pasta to your pumpkin sauce, and toss together gently, adding reserved pasta water if necessary.
  5. Plate and Serve: Spoon into bowls, sprinkle with Parmesan and garnish with fresh herbs.

Notes

This recipe is easily adaptable; feel free to add vegetables, proteins, or spices to suit your taste.
