Ultimate Chicken Zucchini Bake

A delicious and comforting one-pan Chicken Zucchini Bake that’s perfect for busy weeknights or cozy weekends.

  • 2 large chicken breasts, diced
  • 2 medium zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh basil (for garnish, optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Dice your chicken breast into bite-sized pieces, slice the zucchinis, and halve the cherry tomatoes.
  3. Combine the diced chicken, sliced zucchinis, halved cherry tomatoes, minced garlic, olive oil, Italian seasoning, salt, and pepper in a large mixing bowl.
  4. Transfer the mixture to a greased 9×13 inch baking dish and spread it out evenly.
  5. Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the top.
  6. Pop it in the oven for about 25-30 minutes, until chicken reaches 165°F and cheese is bubbling.
  7. Garnish with fresh basil before serving.

Notes

You can prep everything in advance, cover it, and store it in the fridge for up to a day.
