Cheesy Hamburger Potato Casserole

A cozy comfort food dish featuring layers of ground beef, potatoes, and cheese, perfect for chilly days.

  • 1 ½ lbs ground beef (or ground turkey)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 56 medium russet potatoes (thinly sliced, about 1/8 inch)
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup shredded mozzarella (optional, for extra meltiness)
  • 1 10.5 oz can cream of mushroom soup (or cream of chicken)
  • 1 cup milk
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • 1 tbsp olive oil or butter (for greasing the dish)

Instructions

  1. Preheat your oven: Set your oven to 375°F (190°C).
  2. Cook the ground beef: In a large skillet over medium heat, add the ground beef (or turkey) and season it with salt and pepper. Cook until browned, about 5–7 minutes.
  3. Add onion and garlic: Toss in the chopped onion and minced garlic, and cook until the onion is translucent, about 3–5 minutes.
  4. Prep your potatoes: While that’s cooking, thinly slice your russet potatoes.
  5. Mix the casserole base: In a large bowl, combine the browned beef mixture, cream of mushroom soup, milk, half of the cheddar cheese, salt, black pepper, and paprika. Mix well.
  6. Layering time: In a greased 9×13 inch baking dish, layer half of your sliced potatoes at the bottom, spread half of the beef mixture over the potatoes, then sprinkle with half of the remaining cheese. Repeat layers with the rest of the ingredients.
  7. Cover and bake: Cover the baking dish with aluminum foil and bake for 45 minutes.
  8. Golden finish: After 45 minutes, remove the foil and bake for an additional 15–20 minutes, until the top is bubbly and golden brown.
  9. Cool and serve: Let it cool for about 10 minutes before serving.

Notes

Garnish with fresh parsley or chives. This dish pairs well with a simple green salad or crusty bread.
