Cheesy Ground Beef and Rice Casserole

A comforting family favorite, this cheesy ground beef and rice casserole is warm and deeply flavorful, perfect for bringing the family together around the dinner table.

  • 1 lb lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked white rice
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • 1/2 cup milk or beef broth
  • 2 cups shredded cheddar cheese (divided)
  • 1 tsp paprika
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Brown the beef in a large skillet over medium heat until browned, about 5-7 minutes. Break it apart with a spatula as it cooks.
  2. Sauté the diced onion and minced garlic in the skillet until translucent, about 3-4 minutes.
  3. Mix in the cooked rice, cream of mushroom soup, and milk or broth. Add 1.5 cups of shredded cheese, paprika, salt, and pepper; stir until well combined.
  4. Assemble the mixture into a greased 9×13 inch baking dish, spread evenly, and top with the remaining 0.5 cups of shredded cheese.
  5. Bake in a preheated oven at 350°F (175°C) for about 25-30 minutes, until the cheese is melted and bubbly.

Notes

This casserole can be made ahead and frozen for up to three months. Consider adding vegetables or spices for additional flavor variations.
