Apple Cinnamon Breakfast Casserole

A delightful breakfast casserole combining apples, oats, and warm spices for a cozy start to your day.

Ingredients

  • 34 medium Apples, peeled, cored, and diced
  • 2 cups rolled Oats or 1 cup all-purpose Flour
  • 4 large Eggs, beaten
  • 1 ½ cups Dairy (milk or yogurt)
  • 2 teaspoons ground Cinnamon
  • 1/4 cup Sugar or Sweetener
  • 1/4 teaspoon ground Nutmeg
  • 1 teaspoon Vanilla extract
  • A pinch of Salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine your diced apples with a sprinkle of cinnamon and a little sugar in a large bowl and let sit for 10 minutes.
  3. Mix the oats (or flour), remaining sugar, cinnamon, nutmeg, and salt in a separate bowl.
  4. Whisk together the eggs, dairy, and vanilla extract until smooth.
  5. Stir the wet ingredients into the dry ingredients, then gently fold in the apple mixture.
  6. Grease a 9×13 inch baking dish. Pour the mixture into the dish, spreading it evenly.
  7. Bake for about 35-40 minutes, until golden brown and a toothpick comes out clean.
  8. Cool for about 10 minutes before serving.

Notes

This casserole is great for meal prep. Assemble it the night before and bake in the morning!
