Apple Pie Breakfast Quesadillas

Start your day with these warm and inviting apple pie breakfast quesadillas—sweet, cinnamon-spiced apples tucked inside crispy quesadillas.

  • 2 medium Apples (tart varieties like Granny Smith or sweet ones like Honeycrisp)
  • 1 cup Oats or Flour (rolled oats preferred for texture)
  • 2 large Eggs
  • 1/2 cup Milk (dairy or non-dairy)
  • 1 tsp cinnamon
  • Pinch of nutmeg
  • 23 tbsp Sweetener (maple syrup or honey)
  • 4 large Tortillas
  • Butter or coconut oil (for cooking)

Instructions

  1. Prep those apples by peeling, coring, and slicing into bite-sized pieces.
  2. Sauté the apples in butter or coconut oil over medium heat with spices for about 5 minutes.
  3. Mix the eggs, milk, oats (or flour), and sweetener in a bowl, then add the sautéed apples.
  4. Cook the quesadillas in a skillet, pouring half the filling onto one side of a tortilla and folding over. Cook for 3-4 minutes on each side.
  5. Serve cut into wedges, with optional maple syrup, powdered sugar, or yogurt.

Notes

Experiment with different apple varieties and spices. They can be made ahead of time and reheated, or frozen for later.
