These delightful Zucchini Cookies are a delicious twist on a classic treat, allowing you to sneak in some veggies while satisfying your sweet tooth.

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup chocolate chips
  • 1/2 cup chopped nuts (walnuts or pecans)
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  2. Grate the zucchini and squeeze out excess moisture with a clean kitchen towel.
  3. Cream the softened butter, sugar, and brown sugar until light and fluffy.
  4. Add the egg and vanilla extract to the creamed mixture and beat until combined.
  5. Combine the dry ingredients (flour, baking soda, baking powder, salt, and cinnamon) in a separate bowl.
  6. Mix the dry ingredients into the wet mixture, stirring gently.
  7. Fold in the grated zucchini, chocolate chips, and chopped nuts.
  8. Scoop dollops of cookie dough onto prepared baking sheets, leaving space between each.
  9. Bake for 12-15 minutes until the edges are golden brown.
  10. Cool on the sheets for a few minutes before transferring to a wire rack.

Notes

These cookies are best enjoyed warm. You can sprinkle powdered sugar on top or serve with vanilla ice cream for a delightful treat.
