Easy Rum Apple Cake

  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1/2 cup milk
  • 1/4 cup dark rum
  • 34 medium apples, peeled and chopped
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan or line it with parchment paper.
  3. Mix the dry ingredients: whisk together the flour, baking powder, cinnamon, and salt in a mixing bowl.
  4. Cream together the butter and sugar in a separate bowl until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition, then add the vanilla extract.
  6. Mix in the milk and dark rum until combined.
  7. Combine the wet and dry ingredients, mixing on low speed to avoid overmixing.
  8. Fold in the chopped apples gently with a spatula.
  9. Pour the batter into the prepared cake pan and level it out.
  10. Bake for 45 to 50 minutes, or until a toothpick inserted comes out clean.
  11. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Serve warm with powdered sugar or a scoop of vanilla ice cream for an indulgent touch. Wrap the cake tightly to freeze for up to 3 months.
