  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep the zucchini by grating it, squeezing out excess moisture, and setting it aside.
  3. Mix the dry ingredients: flour, oats, baking soda, baking powder, salt, and cinnamon in a bowl.
  4. Combine the wet ingredients: melted butter, brown sugar, and granulated sugar until smooth. Add egg and vanilla extract, stirring until fully combined.
  5. Combine the wet and dry mixtures, stirring until just combined.
  6. Fold in the grated zucchini and chocolate chips.
  7. Scoop the dough onto a parchment-lined baking sheet, spacing them 2 inches apart.
  8. Bake for 12-15 minutes until edges are golden and centers look set.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
  10. Serve with a glass of milk or tea and enjoy!
