Healthy Chocolate Zucchini Bread

A healthy and scrumptious chocolate zucchini bread that incorporates veggies without compromising on flavor.

Ingredients

  • 1 1/2 cups grated zucchini
  • 1 cup all-purpose flour (or gluten-free alternative)
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup monk fruit sweetener
  • 1/2 cup sugar-free chocolate chips
  • 1/2 cup unsweetened applesauce
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon (optional)

Instructions

  1. Grate your zucchini using a coarse grater and squeeze out excess moisture.
  2. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  3. Whisk together the flour, cocoa powder, monk fruit, baking soda, baking powder, salt, and cinnamon in a large bowl.
  4. Mix the grated zucchini, applesauce, eggs, and vanilla extract in another bowl.
  5. Pour the wet mixture into the dry ingredients and gently fold until just combined.
  6. Fold in the sugar-free chocolate chips.
  7. Pour the batter into the greased loaf pan and bake for 50-60 minutes.
  8. Cool the bread in the pan for about 10 minutes, then transfer to a wire rack.

Notes

This bread can be served as breakfast or an afternoon snack. Top with nut butter or Greek yogurt for extra indulgence.
