Double Chocolate Zucchini Bread

A delightful loaf that combines rich chocolate with moist zucchini for a tender and comforting treat.

  • 1 medium zucchini, grated
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan with cooking spray or butter, and dust with cocoa powder.
  3. Grate the zucchini and squeeze out excess moisture.
  4. In a large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  5. In another bowl, whisk together the sugar, brown sugar, vegetable oil, eggs, and vanilla until well combined.
  6. Gradually add the dry ingredients to the wet mixture, being careful not to over mix.
  7. Fold in the grated zucchini and chocolate chips.
  8. Transfer the batter into your prepared loaf pan and smooth the top.
  9. Pop that beauty into the preheated oven and bake for about 50-60 minutes, or until a toothpick inserted comes out clean.
  10. Let it cool in the pan for about 10 minutes before transferring to a wire rack.
