Chocolate Zucchini Muffins

Deliciously moist chocolate muffins made with shredded zucchini, perfect for a cozy treat!

Ingredients

  • 2 cups grated zucchini
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a muffin tin by lining it with paper liners or greasing it with non-stick spray.
  3. Mix together the dry ingredients: all-purpose flour, whole wheat flour, cocoa powder, baking soda, baking powder, and salt.
  4. Combine the wet ingredients: grated zucchini, sugar, vegetable oil, eggs, and vanilla extract until well mixed.
  5. Fold the wet ingredients into the dry ingredients gently.
  6. Add the chocolate chips to the batter and fold until incorporated.
  7. Fill each muffin cup about 2/3 full with the batter.
  8. Bake in the preheated oven for 18-20 minutes or until a toothpick comes out clean.
  9. Cool the muffins in the tin for 5 minutes before transferring to a wire rack.

Notes

These muffins are best enjoyed warm. You can serve them with butter or honey for a special treat.
