Chocolate Chip Zucchini Bread

A delightful twist on a classic, this Chocolate Chip Zucchini Bread is sweet, moist, and packed with chocolatey goodness.

  • 1 ½ cups All-Purpose Flour
  • ½ teaspoon Baking Soda
  • ½ teaspoon Baking Powder
  • ½ teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1 pinch Nutmeg
  • 1 whole Egg
  • ½ cup Canola Oil
  • ½ cup Light Brown Sugar, packed
  • ½ cup Sugar
  • ½ cup Plain Greek Yogurt
  • 1 teaspoon Vanilla Extract
  • 1 cup Zucchini, shredded
  • 1 cup Semi-Sweet Chocolate Chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×5-inch loaf pan with oil or butter.
  3. Mix the dry ingredients: flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Mix the wet ingredients: egg, canola oil, brown sugar, and sugar until smooth, then add Greek yogurt and vanilla extract.
  5. Add the shredded zucchini, ensuring to squeeze out excess water.
  6. Combine the wet and dry ingredients gently.
  7. Add the chocolate chips, saving some for the top if desired.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 50-60 minutes, or until a toothpick comes out clean.
  10. Cool in the pan for 10-15 minutes before transferring to a wire rack.

Notes

Serve warm with butter or powdered sugar. This bread freezes well for up to 3 months.
