Chocolate Chip Zucchini Bread

A delightful blend of sweetness and earthiness, this Chocolate Chip Zucchini Bread is perfect for breakfast, snacks, or dessert.

Ingredients

  • 1 ½ cups all-purpose flour (+ 2 Tbsp)
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp cinnamon
  • ½ tsp nutmeg
  • 2 large eggs
  • 3 cups zucchini (finely grated, about 2 zucchinis)
  • ½ cup vegetable oil
  • ½ tsp lemon juice
  • ¾ cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate your zucchini using a box grater or food processor, then squeeze out excess moisture.
  3. Whisk together flour, sugar, baking soda, salt, cinnamon, and nutmeg in a mixing bowl.
  4. Beat the eggs in another bowl, then add zucchini, vegetable oil, and lemon juice.
  5. Pour the wet ingredients into the dry mixture and gently fold until just combined.
  6. Stir in chocolate chips until evenly distributed.
  7. Grease a 9×5 inch loaf pan or line it with parchment paper.
  8. Transfer the batter into the prepared loaf pan and smooth the top.
  9. Bake for about 55-65 minutes, or until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Serve warm with butter or cream cheese, and enjoy with coffee or as a dessert with ice cream.
