Chocolate Chip Zucchini Banana Bread

A delightful blend of zucchini, ripe bananas, and chocolate chips, creating moist and flavorful bread.

  • 2 large zucchinis, grated
  • 2 ripe bananas
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil (or melted coconut oil)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 loaf pan or line with parchment paper.
  2. Grate the zucchinis and squeeze out excess moisture.
  3. Mash the ripe bananas in a mixing bowl until almost smooth.
  4. Whisk together sugar, oil, eggs, vanilla, and mashed bananas in a large bowl.
  5. Mix the dry ingredients in another bowl: flour, baking soda, baking powder, salt, cinnamon, and nuts if using.
  6. Add the dry mixture to the wet mixture, stirring gently until just combined.
  7. Fold in the drained zucchini and chocolate chips.
  8. Transfer the batter into the prepared loaf pan and spread evenly.
  9. Bake for 50–60 minutes until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes then transfer to a wire rack to cool completely.

Notes

Serve warm with butter or honey. Can add nuts or coconut for variety.
