Chocolate Chip Zucchini Banana Bread

A delightful blend of sweet bananas, rich chocolate chips, and hidden zucchini, perfect for any occasion.

  • 3 medium overripe bananas
  • 3/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3/4 cup shredded zucchini
  • 1 1/2 cups all-purpose flour
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • Dash of ground cinnamon
  • 1/8 teaspoon salt
  • 1 cup chocolate chips + additional for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mash the overripe bananas until smooth.
  3. Mix the sugar, egg, and vanilla extract into the mashed bananas.
  4. Add the shredded zucchini and fold gently.
  5. Combine the flour, baking powder, baking soda, cinnamon, and salt in a separate bowl.
  6. Mix the dry ingredients into the wet ingredients until just combined.
  7. Add the chocolate chips and fold gently.
  8. Pour the batter into the prepared loaf pan and sprinkle additional chocolate chips on top.
  9. Bake for 50-60 minutes or until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack.

Notes

This bread is delightful served warm with butter or toasted. Experiment with nuts or dried fruit for added flavor!
