Blueberry Peach Bread

A delightful Blueberry Peach Bread bursting with summer flavors, perfect for any time of day.

  • 2 cups all-purpose flour
  • 1 cup diced peaches (about 3 peaches), peeled
  • 1 cup blueberries
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup sugar
  • 1 stick of butter, at room temperature
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup sour cream

Instructions

  1. Prepare the pan by greasing a loaf pan with butter or cooking spray and lining it with parchment paper.
  2. Mix the dry ingredients in a large bowl, whisking together the flour, salt, and baking powder.
  3. Cream the butter and sugar together in another bowl using an electric mixer until light and fluffy.
  4. Add the eggs, one at a time, ensuring each is incorporated before adding the next. Then add the vanilla extract.
  5. Combine the wet and dry ingredients by adding the flour mixture to the butter-sugar-egg mixture, alternating with the sour cream.
  6. Fold in the diced peaches and blueberries gently using a spatula.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for about 50-60 minutes, until a toothpick inserted in the center comes out clean.
  9. Cool the bread in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

For a nutty crunch, add 1/2 cup of chopped pecans or walnuts. For a spicy twist, sprinkle in a teaspoon of cinnamon or nutmeg.
