Banana Chocolate Chip Zucchini Bread

A cozy blend of banana, zucchini, and chocolate chips, this bread is perfect for breakfast or a sweet treat.

  • 2 cups grated zucchini
  • 1 cup mashed bananas
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate 2 cups of zucchini and wring out excess moisture.
  3. Mash 1 cup of ripe bananas in a large mixing bowl.
  4. Add 1/2 cup of vegetable oil, 2 eggs, and 2 teaspoons of vanilla extract to the bananas and stir.
  5. Whisk together 1 1/2 cups of all-purpose flour, 1 teaspoon of baking soda, 1/2 teaspoon of baking powder, 1/2 teaspoon of salt, and 1 teaspoon of cinnamon (if using) in a separate bowl.
  6. Fold the dry ingredients into the wet mixture gently.
  7. Incorporate the grated zucchini and 1 cup of chocolate chips into the batter.
  8. Grease a standard loaf pan or line with parchment paper.
  9. Pour the batter into the prepared pan and spread evenly.
  10. Bake for 55-65 minutes or until a toothpick comes out clean.
  11. Cool the bread in the pan for 10 minutes before transferring to a wire rack.

Notes

For a nutty crunch, consider adding 1/2 cup of chopped nuts. You can also make this gluten-free by substituting flour with your preferred gluten-free mix.
