No-Bake Chocolate Watermelon Truffles

A delightful summer treat combining sweet watermelon and rich chocolate in a no-bake truffle form.

  • 2 cups watermelon, pureed and strained
  • 1 1/2 cups dark chocolate chips
  • 1/2 cup coconut cream
  • 1/4 cup shredded coconut (optional)
  • 1/4 cup cocoa powder (for coating)
  • Pinch of salt

Instructions

  1. Puree the watermelon by blending it in a blender until smooth, and strain to eliminate any pulp.
  2. Melt the chocolate by combining dark chocolate chips and coconut cream in a microwave-safe bowl. Heat in intervals until smooth.
  3. Combine the melted chocolate mixture with the pureed watermelon and a pinch of salt, stirring until well mixed.
  4. Chill the mixture covered in the refrigerator for about 60 minutes until it sets.
  5. Form truffles by scooping small portions and rolling them into balls.
  6. Coat each truffle in cocoa powder and optional shredded coconut for desired texture.
  7. Chill again for 15-30 minutes to firm up the coated truffles.

Notes

These truffles can be garnished with mint leaves for a refreshing touch and work well alongside coffee or tea.
