Avalanche Cookies

A delightful mix of crispy rice cereal, creamy peanut butter, sweet marshmallows, and white chocolate that will take you back to cozy moments in the kitchen.

Ingredients

  • 3 cups crispy rice cereal
  • 2 cups mini marshmallows
  • 1 cup creamy peanut butter
  • 1 cup white chocolate chips
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare your ingredients by setting them out in the order you’ll use them.
  2. Mix the creamy peanut butter and white chocolate chips in a microwave-safe bowl, heating in 30-second intervals until melted and smooth.
  3. Add the vanilla extract to the melted mixture and stir well.
  4. Fold in the mini marshmallows and crispy rice cereal gently until coated.
  5. Scoop small balls of the mixture onto a parchment-lined baking sheet.
  6. Chill the baking sheet in the refrigerator for at least 30 minutes.
  7. Serve and enjoy your Avalanche Cookies at room temperature.

Notes

Store leftovers in an airtight container at room temperature for up to a week.
