Apple Yogurt Breakfast Pops

A delightful and wholesome breakfast treat, these Apple Yogurt Breakfast Pops combine the flavors of apples, oats, and yogurt for a fun and simple start to your day.

Ingredients

  • 2 medium-sized apples
  • 1 cup oats (or 1 cup all-purpose flour)
  • 2 large eggs
  • 1 cup of yogurt (Greek or regular)
  • 1 tsp cinnamon (or nutmeg)
  • 24 tablespoons sweetener (honey, maple syrup, or sugar)
  • Optional: 1/4 cup nuts or seeds (like walnuts, almonds, or chia seeds)

Instructions

  1. Prepare the ingredients by peeling and dicing the apples into small chunks and tossing them with cinnamon.
  2. Mix the wet ingredients by whisking together the eggs and yogurt until smooth.
  3. Add the sweetener and mix to adjust the sweetness.
  4. Combine the dry ingredients in a separate bowl, mixing oats (or flour) with a pinch of salt and remaining cinnamon (or nutmeg).
  5. Blend the dry mixture into the wet ingredients and fold in diced apples and optional nuts/seeds.
  6. Pour the mixture into popsicle molds and insert sticks.
  7. Freeze for about 4-6 hours or until solid.
  8. Enjoy by running molds under warm water to release pops and serving with additional fruit or yogurt.

Notes

Leftover mixture can be used to make mini muffins at the same temperature for 20-25 minutes. Optional variations include adding caramel or berries for delightful twists.
