  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the zucchini by grating it and removing excess moisture.
  3. Cream the butter with brown and granulated sugar until light and fluffy.
  4. Add the egg and vanilla, mixing until combined.
  5. Mix the flour, oats, baking soda, baking powder, cinnamon, and salt in a separate bowl.
  6. Combine both mixtures, being careful not to overmix.
  7. Fold in the zucchini and chocolate chips if using.
  8. Scoop mounds onto baking sheets.
  9. Bake for 12-15 minutes until edges are golden.
  10. Cool on the baking sheet before transferring to a wire rack.

Notes

For a dairy-free option, substitute butter with coconut oil. You can also use a flax egg instead of a regular egg for a vegan version.
