Chocolate Chip Zucchini Bread

A deliciously cozy Chocolate Chip Zucchini Bread that combines the aroma of freshly baked goods with a sneaky serving of veggies.

  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsweetened applesauce
  • 2 eggs
  • 1/2 cup dark chocolate chips
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • Flaky sea salt for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate the zucchini and squeeze out excess moisture.
  3. In a large bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  4. Combine the sugars and applesauce in another bowl, then beat in eggs and vanilla extract.
  5. Add the dry ingredients to the wet mixture and fold gently.
  6. Fold in the grated zucchini and chocolate chips.
  7. Grease a 9×5-inch loaf pan or line it with parchment paper.
  8. Pour the batter into the pan and smooth the top.
  9. Sprinkle flaky sea salt on top if desired.
  10. Bake for 50–60 minutes or until a toothpick comes out clean.
  11. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Store the bread in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. This bread also freezes well.
