  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 egg
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 4 hoagie rolls
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix the ground beef, breadcrumbs, Parmesan cheese, parsley, egg, and a pinch of salt and pepper in a large mixing bowl.
  3. Form the mixture into golf-ball-sized meatballs and place them on a baking sheet lined with parchment paper.
  4. Bake the meatballs for about 20 minutes, or until browned and cooked through.
  5. Assemble the hoagie rolls with marinara sauce and 2-3 meatballs, topping with mozzarella cheese.
  6. Bake the assembled subs for about 5 minutes, until the cheese is bubbly and golden.
  7. Garnish with extra parsley before serving.

Notes

For a crispy top, broil for a minute after baking if desired. Substitute ground beef with turkey or chicken if preferred.
