Watermelon Mojito Smoothie

A refreshing blend of sweet watermelon, zesty lime, and refreshing mint that captures the essence of summer.

Ingredients

  • 4 cups watermelon, cubed and seedless
  • 1 lime, juiced
  • 10 fresh mint leaves
  • 1 cup coconut water or sparkling water
  • 12 tablespoons honey or agave syrup (optional)
  • Ice cubes (optional)

Instructions

  1. Prepare the watermelon by cutting it into cubes and removing the seeds.
  2. Juice the lime by cutting it in half and squeezing the juice into a measuring cup.
  3. Add the mint leaves to the blender, potentially muddling them first to release more flavor.
  4. Blend the watermelon cubes, lime juice, mint leaves, and coconut or sparkling water until smooth.
  5. Taste the smoothie and add honey or agave syrup if you prefer it sweeter.
  6. Serve the smoothie in glasses, garnishing with a slice of lime and a sprig of mint if desired.

Notes

For extra coolness, freeze the watermelon cubes beforehand; if the smoothie is too thick, add more water until desired consistency.
