Tropical Lime Coconut Smoothie Bowl

A refreshing and healthy smoothie bowl that brings the flavors of the tropics to your breakfast table.

  • 1 Medium Banana, peeled and frozen
  • 1 cup Fresh Baby Spinach (packed)
  • 1/2 cup Ice Cubes
  • 1/2 cup Cubed Fresh Pineapple
  • 1/2 cup Chopped Peeled Mango or Frozen Mango Chunks
  • 1/2 cup Plain Greek Yogurt
  • 1/4 cup Sweetened Shredded Coconut
  • 3 tablespoons Honey
  • 2 teaspoons Grated Lime Zest
  • 1 teaspoon Lime Juice
  • 1/2 teaspoon Vanilla Extract
  • 1 tablespoon Spreadable Cream Cheese (optional)

Instructions

  1. Gather all your ingredients. This makes the blending process so much smoother.
  2. Add fresh baby spinach followed by the frozen banana to your blender.
  3. Blend these two for about 30 seconds until fully combined.
  4. Add the ice cubes, cubed pineapple, chopped mango, Greek yogurt, shredded coconut, honey, lime zest, lime juice, and vanilla extract.
  5. Turn on your blender again and let it run until everything is completely smooth.
  6. Taste your creation and adjust sweetness or acidity as desired.
  7. Pour the smoothie mix into your favorite bowl.
  8. Top with lime wedges, sliced banana, almonds, granola, or your favorite toppings.

Notes

For a vegan option, substitute Greek yogurt with plant-based yogurt and honey with maple syrup.
