Stuffed Grilled Cheese Breakfast

A delicious twist on the traditional grilled cheese sandwich, stuffed with eggs and optional savory fillings for a hearty breakfast.

  • 2 slices of thick bread (sourdough or whole grain)
  • 12 cups shredded cheese (cheddar, mozzarella, gouda, or vegan cheese)
  • 2 eggs
  • 2 tablespoons butter (or avocado/coconut oil)
  • Salt (to taste)
  • Pepper (to taste)
  • Optional Fillings:
    • 2-3 slices crispy bacon (or turkey bacon)
    • ½ avocado (sliced)
    • 1 tomato (sliced)
    • 1 cup fresh spinach
    • Herbs (like basil or chives)

Instructions

  1. Prepare your workspace by clearing countertops and gathering all your ingredients.
  2. In a bowl, crack your eggs, add a pinch of salt and pepper, and whisk them together until frothy.
  3. In a non-stick skillet over medium heat, add a small pat of butter and let it melt. Pour in your whisked eggs and stir gently. Scramble them until just set and then set aside.
  4. Wipe the skillet clean and add another tablespoon of butter. Place one slice of bread in the pan and sprinkle a layer of shredded cheese. Load on your scrambled eggs and any optional fillings, then top with another layer of cheese and the second slice of bread.
  5. Grill the sandwich for about 3-4 minutes on each side until golden brown and crispy, pressing down gently with a spatula.
  6. Once both sides are golden, remove from heat and slice the sandwich diagonally to serve.

Notes

To prevent sogginess, allow scrambled eggs to cool slightly before adding them to the sandwich. Optional variations include Mediterranean, mushroom and Swiss, or breakfast burrito styles.
