Sausage Tortellini Soup with Spinach

A cozy, hearty sausage tortellini soup with sweet potatoes and fresh spinach, perfect for chilly evenings.

Ingredients

  • 2 tablespoons Olive Oil
  • 1 Onion, diced
  • 3 cloves Garlic, minced
  • 2 Sweet Potatoes, diced
  • 4 cups Broth (Chicken or Vegetable)
  • 9 oz Three-Cheese Tortellini
  • 4 cups Fresh Spinach
  • Salt & Pepper, to taste
  • ½ cup Heavy Cream (optional)

Instructions

  1. Sauté the onions in olive oil over medium heat for 4-5 minutes until translucent.
  2. Add the minced garlic and sauté for 30 seconds until fragrant.
  3. Incorporate the diced sweet potatoes and cook for about 5 minutes.
  4. Pour in the broth and bring to a gentle boil, then simmer for 15-20 minutes.
  5. Add the tortellini and cook according to package instructions (about 3-5 minutes).
  6. Mix in the fresh spinach until it wilts.
  7. Season with salt, pepper, and optionally add heavy cream. Stir well.
  8. Serve hot, with a drizzle of olive oil or sprinkle of cheese if desired.

Notes

Feel free to customize this soup by adding crushed red pepper for heat or other seasonal vegetables.
