Peach Quick Bread

A delightful and nostalgic peach quick bread that’s perfect for breakfast, brunch, or an afternoon snack.

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup peaches, peeled and diced
  • 1/2 cup brown sugar (for topping)
  • 1/4 cup flour (for topping)
  • 1/4 cup cold butter (for topping)
  • 1 teaspoon cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your loaf pan by greasing and flouring a 9×5-inch loaf pan.
  3. Mix the dry ingredients in a large bowl: flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  4. Create the peachy mixture in a separate bowl by beating the eggs, then stirring in melted butter, vanilla extract, and diced peaches.
  5. Combine the wet ingredients with the dry ingredients, stirring gently until just combined.
  6. Prepare the crumb topping by mixing brown sugar, flour, cinnamon, and cold butter until crumbly.
  7. Transfer the peach batter to the prepared pan and sprinkle the crumb topping evenly over it.
  8. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

For a dairy-free option, substitute unsalted butter with coconut oil. For a vegan alternative, replace eggs with flaxseed meal.
