Instructions

  1. Prep the peaches: Wash, cut in half, and remove the pits.
  2. Blanching time: Boil water and blanch peach halves for 30 seconds, then transfer to ice water.
  3. Peel and slice the peaches into quarters or slices.
  4. Make the syrup by simmering sugar and water; add lemon juice.
  5. Pack sterilized jars with peach slices and pour hot syrup over.
  6. Seal jars and process in a boiling water bath for 20 minutes.
  7. Cool jars completely and store in a cool, dark place.
