Chicken Zucchini Pasta

A hearty and flavorful Chicken Zucchini Pasta, perfect for a cozy dinner any night of the week.

  • 2 Chicken Breasts, Diced
  • 2 Medium Zucchinis, Sliced
  • 8 Ounces Pasta (e.g., penne or spaghetti)
  • 2 Tablespoons Olive Oil
  • 3 Cloves Garlic, Minced
  • Salt and Pepper to Taste
  • Parmesan Cheese (Optional)
  • Fresh Basil for Garnish (Optional)

Instructions

  1. Cook the Pasta by bringing a large pot of salted water to a boil. Once boiling, add in your pasta and cook according to package instructions until al dente (8-10 minutes). Reserve a cup of pasta water before draining.
  2. Prepare the Chicken by adding olive oil to a large skillet over medium heat. Once heated, toss in the diced chicken breasts, season with salt and pepper, and cook until golden brown, about 6-7 minutes.
  3. Add the Garlic and Zucchini to the skillet, sautéing the garlic for about 1 minute until fragrant. Toss in the sliced zucchini, season with more salt and pepper, and cook for an additional 3-4 minutes until tender.
  4. Combine Everything by draining the pasta (remember to reserve water) and adding it to the skillet with chicken and zucchini. Stir to combine, adding reserved pasta water as needed to create a sauce.
  5. Serve It Up by plating your Chicken Zucchini Pasta, finishing with grated Parmesan cheese and fresh basil, if desired.

Notes

This dish is versatile—feel free to add shrimp, turkey, or more veggies. For a creamier dish, stir in some heavy cream. Perfect for easy family dinners and leftovers!
