Apple Cinnamon Breakfast Skillet

A delightful morning dish that combines the sweetness of apples with the warmth of cinnamon, perfect for starting the day.

  • 4 medium-sized apples
  • 1 cup old-fashioned oats
  • 2 large eggs
  • 1 cup milk or yogurt
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • 24 tablespoons maple syrup or honey
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1 tablespoon butter or coconut oil

Instructions

  1. Preheat a large, heavy-bottom skillet over medium heat.
  2. Core and slice the apples into wedges.
  3. Add a tablespoon of butter to the skillet, then toss in apple slices and 1 teaspoon of cinnamon. Sauté for 5-7 minutes.
  4. Combine oats, eggs, milk, and remaining teaspoon of cinnamon in a bowl.
  5. Pour the oat mixture over the apples in the skillet and cook for 8-10 minutes until edges set.
  6. Broil for 3-5 minutes to achieve a crispy top.
  7. Serve warm, dusted with powdered sugar if desired.

Notes

This recipe is a great way to use slightly bruised apples. You can make it ahead of time by preparing the apples the night before. Adjust sweetness based on preference.
