Chopped Italian Keto Antipasto Salad

A vibrant and flavorful salad inspired by the classic antipasto platter, perfect for a keto lifestyle.

Ingredients

  • Salami, chopped
  • Olives (mix of green and black)
  • Cheese (Mozzarella or Provolone), diced
  • Lettuce or mixed greens, chopped
  • Cherry tomatoes, halved
  • Red onions, finely diced
  • Pepperoncini, sliced
  • Olive oil
  • Red wine vinegar
  • Italian spices (Oregano, Basil)
  • Salt and pepper, to taste

Instructions

  1. Prep your ingredients by chopping salami, cheese, and veggies into bite-sized pieces.
  2. Make your salad base by tossing chopped lettuce with diced cherry tomatoes in a large bowl.
  3. Add chopped salami, olives, cheese, diced red onions, and sliced pepperoncini to the salad base.
  4. Create the dressing by whisking together olive oil, red wine vinegar, Italian spices, and salt and pepper in a small bowl.
  5. Toss the dressing over the salad mixture and gently blend until well coated.
  6. Serve promptly in your favorite bowl, garnished with extra herbs or cheese if desired.

Notes

This salad can be made ahead of time. Store the dressing separately if preparing in advance to keep the greens crisp.
