1 teaspoon salt
1/2 cup unsalted butter, chilled and cubed
1/4 cup cold water
1 cup diced ham
1 cup shredded cheese (cheddar or your choice)
1 egg (for egg wash)
Instructions
Make the dough: In a large mixing bowl, combine the flour and salt. Add the chilled, cubed butter and use a pastry cutter or your fingers to mix until it resembles coarse crumbs. Gradually add cold water, one tablespoon at a time, mixing until the dough comes together.
Chill the dough: Wrap your dough in plastic wrap and refrigerate for at least 30 minutes.
Prepare the filling: While the dough is chilling, in a bowl, mix the diced ham and shredded cheese.
Roll out the dough: Preheat your oven to 400°F (200°C). On a floured surface, roll out your chilled dough to about 1/8 inch thick and cut it into squares.
Assemble the hot pockets: Place a spoonful of the ham and cheese mixture in the center of each square, fold the dough over to create a triangle, and press the edges with a fork to seal.
Brush the tops with egg wash: Beat the egg in a small bowl and brush the tops of the pockets.
Bake: Arrange the hot pockets on a baking sheet and bake for about 20-25 minutes or until golden brown.
Cool and serve: Let them cool for a few minutes before serving.
