Cucumber Tomato Salad

A refreshingly simple salad that embodies summer, featuring juicy tomatoes and crunchy cucumbers dressed in a light lemony drizzle.

  • 2 firm cucumbers
  • 3 ripe tomatoes
  • 1 small red onion
  • 1/4 cup fresh parsley
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • Salt & pepper to taste

Instructions

  1. Prep your ingredients: Wash your cucumbers and tomatoes thoroughly.
  2. Slice the cucumbers into quarter-inch rounds or half-moons.
  3. Chop the tomatoes into wedges or bite-sized pieces.
  4. Slice the red onion thinly.
  5. Chop a handful of fresh parsley.
  6. Mix all ingredients in a large bowl.
  7. Dress the salad with olive oil, lemon juice, salt, and pepper.
  8. Serve and enjoy!

Notes

For an added twist, consider crumbling feta cheese on top or adding diced avocado.
