1 large egg

1 cup plain yogurt
1 tablespoon chopped fresh herbs (like dill or parsley)
1 clove garlic, minced

Instructions
Prepare the Zucchini: Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a colander and sprinkle with salt. Let it sit for about 15 minutes.
Mix the Fritter Batter: In a large mixing bowl, combine the grated zucchini, flour, Parmesan cheese, green onions, egg, garlic powder, and black pepper. Stir everything together until well combined.
Heat the Oil: In a large skillet over medium heat, add enough oil to generously coat the bottom of the pan.
Cook the Fritters: Using a tablespoon or ice cream scoop, drop spoonfuls of the batter into the hot oil. Fry for about 3-4 minutes per side, until golden brown.
Drain and Keep Warm: Transfer the fritters to a plate lined with paper towels to absorb excess oil.
