Feuilleté au Potimarron et au Miel

A cozy dish of golden, flaky pastry filled with sweet and earthy pumpkin and lightly drizzled with honey.

Ingredients

  • 1 medium potimarron (red kuri squash)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 sheet puff pastry
  • 3 tablespoons honey
  • Fresh thyme for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the potimarron into 1-inch cubes.
  3. Toss the cubed squash with olive oil, salt, and pepper.
  4. Spread the seasoned squash on a baking sheet in a single layer and roast for about 25-30 minutes.
  5. Roll out the puff pastry on a lightly floured surface.
  6. Spoon the roasted squash onto the puff pastry, drizzle with honey, and fold the edges over.
  7. Place the wrapped pastries on a baking sheet, egg wash them, and bake for about 15-20 minutes.
  8. Garnish with fresh thyme and serve.

Notes

For a vegan option, replace honey with maple syrup and use plant-based pastry.
