  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 onion, finely chopped
  • 1/2 cup carrots, finely chopped
  • 1/2 cup water chestnuts, chopped
  • 3 tablespoons soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Lettuce leaves (e.g., Boston or butter lettuce) for wrapping

Instructions

  1. Heat the oil in a large skillet over medium-high heat until hot.
  2. Add the minced garlic and chopped onion; sauté for 2-3 minutes until translucent.
  3. Toss in the ground chicken; cook for 5-7 minutes until golden brown.
  4. Stir in the chopped carrots and water chestnuts; cook for another 2-3 minutes.
  5. Mix together soy sauce, hoisin sauce, rice vinegar, and sesame oil in a bowl; pour over chicken mixture.
  6. Simmer for 2 minutes to meld the flavors.
  7. Remove from heat, let cool slightly.
  8. Serve by spooning chicken mixture into lettuce leaves.
